As you may or may not know, I used to work for POM Wonderful … they sell pure, California pomegranate juice in that iconic double bubble bottle with the “P-heart-M” that spells POM? Yep, that’s the one. I liked pomegranates before I began working there, but now I can genuinely say that I really have a passion for the ancient fruit, with its rich, sweet-tart flavor, gorgeous jewel like arils (seeds), and blood red juice. It’s become one of my favorite fruits to flirt with in the kitchen.

Pomegranates are becoming more widely available and popular in North America with every season and we can say thanks in part to POM for that. They were one of the first companies in the U.S. to really market this exotic fruit that’s more common in parts of the Middle East. The season of this ruby red fruit is just weeks away so I decided to create a POMegranate cupcake series. Pomegranate juice is as wonderful to cook with as the fruit itself and it can be use to make sweet or savory recipes. These are the first three cupcakes in a series of five. You can see the final two cupcakes on POMWonderful.com on Wednesdays in September. Coming up this week … a cupcake for breakfast! Now I’m just looking for my final flavor … any ideas? I’d love to hear them …
