With a gluten free fiance, I’m constantly trying to come up with new snacks and dinner party appetizer ideas that are … gluten free AND delicious enough to serve to all those lucky humans that are still gluten friendly!
Recently, I developed this recipe for Gluten Free Oven-Fried Golden Zucchini Coins – after receiving the Oster® Versa® 1100 Performance Blender from … you guessed it … Oster®! What’s so convenient about this blender is that is also comes with a food processor bowl that’s great for making crumb mixtures to coat anything you want to have that “oven-fried” taste! It’s also really easy to use, with 3 speed settings and pre-programmed settings so it can do the thinking for you!
- 1 cup gluten free panko bread crumbs
- 1/2 cup almonds (you can replace these with more bread crumbs if there’s a nut allergy)
- 1 Tablespoon brown sugar
- 2 teaspoons dried chives
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 eggs
- 1 Tablespoon milk or almond milk
- 2 Tablespoon honey mustard
- 1 large zucchini, sliced into 1-inch thick rounds
- Preheat oven to 400° F.
Line a baking sheet with parchment or tin foil and brush with oil. Set aside.
Add gluten free panko bread crumbs, almonds, brown sugar, chives, salt and pepper to food processor bowl of Oster® Versa® 1100 Performance Blender. Pulse until mixture is blended into crumbs. Pour crumbs into shallow 8X8 dish and set aside.
In shallow bowl, whisk eggs with milk and mustard until combined. Set aside.
Slice zucchini into 1-inch rounds.
Use one hand to dip each zucchini round into the egg mixture, then the other hand to coat each piece with the crumb mixture, using a spoon to ensure the entire zucchini coin is covered. Set them evenly spaced on oiled baking sheet as you go.
Bake at 400°F on middle rack for about 30-35 minutes, or until golden brown.
Let cool for about 3-5 minutes. Sprinkle with a few additional chives or fresh parsley to garnish, then serve while warm, crisp and oh so delicious!
