Quinoa is my latest flirtation. It is also an edible seed that originated in South America and has been imported for around 6000 years according to wiki-smarty-pants-pedia. It has a high protein content compared to most grains and a light fluffy texture that’s somewhat similar to couscous.
It’s pretty easy to prepare quinoa and the subtle, nutty flavor makes it a fairly blank canvas for most any flavor and seasoning combination. I like it cold, I like it hot, with cucumber or apricot, in a bowl or on a plate, I think quinoa simply great!
